In there they show the logos of the Jinetes( bull riders) and the ganaderias but they don't look professional to me. I want something with more formality, but that conveys a message of furiousness and toughness!

This logo is the image for a rodeo venue. It is a little different than a bull ring, but it doesn’t matter. I think the image of a bull with the Jinete (rider) would be better, as long as the logo identifies the location, which is El Sabino. The state is Guanajuato, and you could also abbreviate it as GTO, so in the logo the wording could be:
Plaza de Toros San Miguel
El Sabino, Gto
