Thank you to everyone for your entries!
I can see some very good work here. This has helped me make my mind up as to what I want exactly:
1. stick to the colours yellow, black and white
2. one-line logo - if there is a picture or a sketch, let it be to the left of the letters and be approximately the same hight.
3. keep away from the (mint) leaf - I think too many companies with this word in their name have exhausted the mint leaf and we are just going to look like the rest of them - I want our logo to be different, even though our name includes the word 'mint' - this can be associated with money as well as the plant, so some ideas with coins etc are also welcome.
4. For me less is more - the more clean, clear-cut and fresh the logo is, the better.
5. I do have one worry as to what the colours will look when we print them to paper, as I tried to print off from the website and the colours did not come out as great on paper as they looked on the website. I am not sure how I will work out around this, maybe please try to make they yellow a bit more brighter.
6. I really wish to see more designs with a neon-sign style where the letters flow into each other.
7. If you are using a currency sign, this should be the GBP - £ sign, as we are based in the UK - no EURO here yet...
8. White background works best, even though some of my top ranks have black background, I have to think about the printing of the letterhead hundreds of time daily and if the background is solid black, lots of smudges are likely to occur, as we cannot wait for ages for the ink to dry (also consider the cost, but not our main consideration)

I will probably keep adding to these as we progress, but I hope they are helpful and you will come up with some more great designs.
Please accept my sincere thanks for your hard work!
