We like these fonts, colors and style

I'm attaching the logo for the US Dept. of interior.
I love this look but instead of a buffalo I'd like a steer featured in the center.
The words "Coals Burger' on top and "Grilling since 2004" on the bottom.
I prefer black and white but might consider the right option in color.
